Whole Wheat DosaDosa are Indian style crepes (thin pancakes).  Different regions of India have different styles, and each mom has her own special methods and additions.  This is a recipe for whole wheat dosa, which some call "foreign dosa".

The reason this one is considered foreign is that normal Indian dosa are made with a bean or lentil basis with perhaps a little grain flour added in, rather than being fully made from grain.

Ingredients:

  • 3 cups whole wheat flour
  • 1/2 cup dry wheat semolina or hominy "grits"
  • 1 1/2 teaspoons ground gray salt
  • 1/2 teaspoon yeast, or a finger full of sourdough starter
  • 3-4 cups or more of water

Instructions:

1. The night before, whisk together the flour, salt, yeast, and water.
2. Make sure there is enough water to make a thin batter.  It shouldn't be about the consistency of a yogurt drink.
3. Cover with a plate or plastic wrap, and refrigerate overnight.
4.  The next day, heat your frying pan on the low side of medium heat.  Add about a teaspoon of olive or coconut oil.
5.  Pour in about a half cup of batter, and spread it around to fill the bottom of the pan.
6.  When the bottom is brown, carefully flip the pancake with a spatula, and cook until that side is brown.
