This deliciously simple salad is the standard for breakfast or the ten o'clock meal in the Mediterranean.
Ingredients:
  • 2 cucumbers
  • 1 tomato
  • 1 onion
  • 1 bell pepper
  • 1 tablespoon fresh parsley
  • a sprinkle of gray salt or the juice of 1 lemon
  • 1 tablespoon olive oil
  • a dash of paprika


Instructions:

Simply chop everything as finely as possible, while still leaving some texture, and mix it together in a bowl.
If you like, you can mix in some prepared tahini.  It's very tasty that way.
This recipe is excellent with labane and Druze pita.
